Well, tonight I had a craving for something spicy. So, I decided to whip up some taco's, but I didn't prepare regular taco's. In the freezer I found some ground turkey and ground pork that had been in there for awhile and needed to be used up. Also, I had no taco shells, so I made my own. I used a very basic flour tortilla recipe that I have used many times before. The only problem I ran into tonight was how the shells turned out; they are somewhat ugly! Unfortunately, I do not have a tortilla press, so I had to roll the shells out with my rolling pin. And honestly, even though they are misshaped, they tasted great.
Flour Tortillas
Ingredients:
3 cups All Purpose Flour
2 tsp Baking Powder
3/4 tsp Salt
about 1 cup Water
1. Stir together dry ingredients. Gradually stir in enough warm water to form a crumbly dough, then work dough with your hands until it holds together. Turn out on a board and knead till smooth.
Flour Tortillas

3 cups All Purpose Flour
2 tsp Baking Powder
3/4 tsp Salt
about 1 cup Water
1. Stir together dry ingredients. Gradually stir in enough warm water to form a crumbly dough, then work dough with your hands until it holds together. Turn out on a board and knead till smooth.
2. When the dough comes together (like in the picture above), cover it with plastic wrap and let is rest for 15 minutes.

3. After the dough has rested, divide the dough into 12 pieces. Flatten one ball into a 4 or 5 inch circle, then roll to a 9 inch round, rolling from the center to the edges. Turn tortilla after stretching dough as you carefully peel it off the board.

4. Place on a preheated griddle or heavy wide frying pan with a little oil. Almost immediately blisters will appear. Turn tortilla over and press all over with a wide spatula. Turn tortilla again and press on the other side until blisters turn a golden brown. If tortilla sticks or browns too quickly, reduce the heat. (This happened to me halfway through and one of my shells burnt! Oh well, I made plenty.)

5. My finished product. You can either throw them on a plate and keep them in the microwave or in the oven to keep them warm until you're ready to use them. (As you can see, my tortillas were not perfect, but as i said earlier, they tasted great. I actually think they are better than store bought. Eventually I will buy a tortilla press so I can have proper looking shells.)
Overall Difficulty: 2 out of 5 (1.5 with tortilla press)

This is a mixture of ground turkey and ground pork (actually breakfast sausage). I wanted to use up what I had left in the freezer before it got freezer burnt.

Part of my prep work. On the right is 1/4 of a yellow onion, small diced. And on the right is one clove of garlic finely chopped.

These are some dried chili's I bought a few weeks back. On the left is Chile Guajillo and on the right is Chile de Arbol. I bought a package of each containing about 100 chili's for I think $3 total! Pretty cheap, and they store well. I have mine stored in old jars. They are great in Mexican/Spanish dishes. Very versatile and great if you like a little spice in your food.
