Here is one of the tasting menu’s that I served at the Mattoon Golf and Country Club during my time as Chef there…

~Nigirizushi Amuse; Albacore, Super White Tuna, Sushi Rice w/ Wasabi and Yuzu Sauce
~Shiitake and Swiss Chard Soup served with Vegetarian Spring Roll
~Nappa Cabbage Salad tossed with Ramen Noodles, Sesame Seeds, Almonds, and Onions
~Grilled King Shrimp w/ Purple Sticky Rice, Shiitake Mushrooms, and a White Wine Sauce
~Chinese-Spiced Duck Breast with a Ginger-Chili Glaze, Snow Peas
~Lemon Sorbet
~Beef Tataki, Seared Beef Tenderloin Medallions (Rare) w/ Green and Red Chile Citrus Yuzu Sauces
~Vanilla and Ginger Rice Pudding
